Color & Aroma

Deep purple with dark brick hues. Unashamedly Cabernet with cigar box, cassis and clove.

Palate

Manages to evade the โ€˜Cabernet donutโ€™ somehow with a dense core of fruit through the mid-palate. Mouth-coating tannins that are firm yet beautifully rounded give power and drive creating a long finish of dark fruit and savoury spice.

Pairing

Grilled lamb chops, served with broccolini & smashed potatoes.

Will cellar beautifully for 10-15 years

About

A generous palate with red currant, cranberry and cherry with integrated cedar oak characteristics. Designed to age, the wine is truly delicious now but will develop gracefully for 10 to 15 years.

The 2023 vintage will be remembered by many as a challenging year in the vineyard, especially during Spring with regular rain events causing increased disease pressure.ย  Fortunately, McLaren Valeโ€™s vicinity to the ocean prevailed with sea breezes and lower rainfall than other regions reducing the mildew outbreaks.ย  The cool spring gave way to a mild summer and long ripening period which allowed fruit to reach optimum ripeness with lower alcohol levels.ย  Vintage began 2-3 weeks later than a โ€˜normalโ€™ vintage, with yields lower than average.ย  The slow ripening and cool temperatures provided perfect natural acidity in whites with fantastic colour in reds.

Maker Notes

Harvested from two old Cabernet vineyards on the Maxwell property. Picked on the same day, vinified in small 2T open fermenters, with fermentation finishing after 8-10 days. Kept on skins for a further 8-10 days to build tannin and structure.

From two blocks planted in 1972 to a deep bedrock of limestone. You can walk under the site via a cave, hence the reference, dug in the early 1900s. This and the Ellen Street are Maxwell classics, and they share a common thread. The third in a trio of releases from a cool year, with this the coolest, yet the DNA of this cuvรฉe remains. Thereโ€™s characteristic depth, dark-fruited allusions, Christmas spices, wild thyme and some chocolate notes. A generous wine, well constructed, varietally on point and, for those who like a little, but not too much, hedonism.
